Waldorf Turkey Burgers
- 2 pounds sweet potatoes peeled, cut into wedges
- 2 tablespoons olive oil
- 1 pound ground turkey
- 2 green apples 1 finely grated, 1 finely chopped
- 1 carrot finely grated
- 1 onion finely grated
- 1 large egg lightly beaten
- 1/2 cup breadcrumbs
- 1 clove garlic crushed
- 3 celery stalks finely chopped
- 1/2 cup walnuts finely chopped
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 8 butter lettuce leaves
- 1 avocado thinly sliced
- 2 beets medium, peeled, grated
- 8 bread rolls crusty white, cut in half
- Preheat oven to 400u0b0F. Place sweet potatoes in a saucepan, cover with cold water, bring to a boil on medium heat. Gently boil for 5 mins, until par-cooked. Drain and pat dry with paper towels.
- Transfer sweet potatoes to a baking tray. Toss with oil and season. Bake for 30-35 mins, until golden brown and tender.
- Meanwhile, combine the ground turkey, grated apple, carrot, onion, egg, breadcrumbs and garlic in a bowl. Shape turkey mixture into 8 patties. Place on a plate. Cover with plastic wrap and refrigerate for 10 mins.
- Combine chopped apple, celery, walnuts, mayonnaise and lemon juice in a medium bowl. Refrigerate until required.
- Heat a non-stick frying pan on medium. Spray patties with oil. Cook patties, in batches, for 4-5 mins each side, until cooked through.
- Place lettuce, avocado and beets on base of rolls. Top with a turkey patty, apple salad and remaining rolls. Serve with sweet potato wedges.
