Spaghetti And Meatballs Omelette
- 3/4 cup frozen peas thawed
- 3 1/2 ounces spaghetti
- 2 tomatoes finely diced
- 1 tablespoon olive oil
- 4 3/8 ounces sausage meat formed into meatballs
- 3 sprigs parsley coarsely chopped
- 8 eggs
- 6 3/4 tablespoons semi-skimmed milk
- sliced tomato
- parsley leaves
- Cook spaghetti in boiling salted water according to package directions. Drain and rinse under cold water.
- For the meatballs, heat 1 tbsp oil and sear meatballs for 3-4 mins. Remove from heat and set aside.
- To prepare the omelette, whisk together eggs and milk. Season. Heat 1/2 tsp oil in a frying pan, add 1/4 of the egg mixture and cook over medium heat for 3 mins. Add 1/4 of prepared ingredients--peas, spaghetti, diced tomatoes, parsley and meatballs--to omelette and cook another 2 mins. Keep warm while making 3 more omelettes. Serve garnished with sliced tomato and parsley leaves.
