Shredded Chicken And Tabouli Pitas

  1. Heat a medium frying pan over high heat. Add bulgur and cook for 1-2 mins, until lightly toasted. Transfer to a large bowl. Add 2/3 cup boiling water. Let stand for 30 mins. Drain and return to bowl.
  2. Add chicken, tomato, cucumber, onions, herbs, olive oil, lemon zest, lemon juice and garlic. Season.
  3. Spread mashed avocado inside pitas. Fill with chicken tabouli mixture and cheese. Serve.
