Shredded Chicken And Tabouli Pitas
- 3 ounces bulgur wheat
- 3 1/2 ounces rotisserie chicken shredded
- 1 large tomato finely chopped
- 1/2 persian cucumber peeled, finely chopped
- 2 spring onions finely chopped
- 4 tablespoons flat leaf parsley leaves fresh, chopped
- 2 tablespoons fresh mint leaves chopped
- 3 teaspoons olive oil
- 1 lemon zested and juiced
- 1 clove garlic minced
- 4 pitas halved
- 1 avocado small, mashed
- 1 1/2 ounces cheddar cheese grated
- Heat a medium frying pan over high heat. Add bulgur and cook for 1-2 mins, until lightly toasted. Transfer to a large bowl. Add 2/3 cup boiling water. Let stand for 30 mins. Drain and return to bowl.
- Add chicken, tomato, cucumber, onions, herbs, olive oil, lemon zest, lemon juice and garlic. Season.
- Spread mashed avocado inside pitas. Fill with chicken tabouli mixture and cheese. Serve.
