Turkey - Black Bean Chili
- 1 c. chopped onion
- 1/2 c. sliced celery
- 2 (16oz.) cans black beans
- 1 (10oz.) can whole tomatoes, undrained and chopped
- 6 oz cooked, diced turkey breast
- 1 Tbsp. chili seasoning mix
- 1/4 c. and 1 Tbsp. nonfat sourcream
- sweet red pepper strips
- vegetable cooking spray
- Coat dutch oven with cooking spray and place over medium high heat until hot.
- Add onion and celery with cooking spray and suate till tender.
- Transfer to a blender.
- Drain beans, reserving liquid.
- Add 1/2 of the beans and all of the liquid to the blender.
- Cover and process until smooth.
- Return to the dutch oven and add remaining ingredients.
- Cook several minutes till desires consistency.
- Serve with pepper strips and sourcream.
