Bibanesi Savory Treats
- 3 1/4 cups flour
- 3/4 cup water
- 1 teaspoon barley malt
- 3 11/16 tablespoons extra-virgin olive oil
- 2 1/3 tablespoons lard
- 1 tablespoon yeast brewer's
- 1 5/16 teaspoons salt
- sesame seeds
- Knead the flour, water, malt barley, oil, lard, yeast, and salt together for approximately 10 minutes by hand on a work surface.
- Let the dough rest for 30 minutes.
- Shape the dough into long breadsticks approximately 1/2 inch thick, coat them with the sesame seeds, then cut them into pieces approximately 5 centimeters long.
- Place the pieces on a baking sheet lined with wax paper and let them rise for 1 hour.
- Preheat the oven to 180C.
- Bake for 25 minutes, or until golden.
- Turn off the oven, leave them in the oven, and let them cool completely with the oven door slightly ajar.
- They can be stored for up to 1 week in a metal canister.
