Spicy Mahi Mahi Burrito With Crunchy Green Cabbage Slaw
- 1 pound mahi mahi sliced into 1" pieces
- 2 tablespoons olive oil
- 1 lime large, juiced
- 1/4 cup cilantro chopped
- 1/4 teaspoon salt
- 1 pinch cayenne pepper
- 1 tablespoon chili powder
- 1 bag green cabbage shredded
- 1/4 cup cider vinegar
- 2 tablespoons sugar
- 2 tablespoons cilantro chopped
- 1 teaspoon celery seed
- 1 pinch red pepper
- 1 pinch cayenne pepper
- 1 tablespoon olive oil
- 4 wheat tortillas large low fat
- 1 cup cheese mexican light
- 1 cup pico de gallo store purchased
- 4 tablespoons light sour cream
- Combine olive oil, lime, chili powder, 1/4 cup cilantro, cayenne and salt in shallow dish. Coat Mahi Mahi with marinade and let sit for 15 minutes.
- Slaw
- Combine olive oil vinegar, sugar, cilantro, cayenne pepper and salt in a bowl. Toss with cabbage and let sit for 15 minutes.
- Using a stove top grill pan, grill Mahi Mahi until done.
- Warm tortillas and top with slaw, Mahi Mahi, pico de gallo and cheese.
