Bitter Lettuce Salad With Cheese & Walnut Rolls
- 3 tablespoons sugar
- 3/4 cup walnuts
- 7/8 cup cream cheese
- 1/2 teaspoon paprika
- 1 clove garlic peeled and chopped finely
- 3 tablespoons balsamic vinegar light
- 3 teaspoons jelly wine
- 1 teaspoon mustard
- 2 tablespoons sunflower oil
- 4 tablespoons walnut oil
- 1/4 cress chopped
- 4 stalks chervil chopped
- 1 3/8 cups lettuce frisee, chopped
- 5 cups rocket chopped
- 2 1/2 cups radicchio chopped
- Bring the sugar to a boil with a little water in a saucepan and stir until it starts to caramelize. Stir in the walnuts and caramelize until they're golden brown. Cool the walnuts on a shallow dish lined with parchment or wax paper.
- Mix the cream cheese with the paprika and season to taste. Form the mixture into 8 egg-shaped balls, cover and chill.
- For the dressing: puree the jelly, mustard, vinegar and garlic and stir in the oil. Season to taste and stir in the chervil.
- Put the walnuts in a plastic bag and finely crush them with a rolling pin. Pour them out onto a shallow dish and roll the cream cheese balls in the nuts until they're covered. Toss the lettuce with the dressing and serve on 4 plates.
