Westphalian Chicken Soup
- 2 onions peeled and finely diced
- 2/3 pound smoked bacon sliced
- 7/8 pound green beans halved
- 2/3 pound potatoes peeled and cut into cubes
- 2 3/4 cups carrots peeled and cut into cubes
- 2 apples small, peeled, cored and cubed
- 2 pears small, peeled, cored and cut wedges
- 2 stalks savory
- 1/2 bunch oregano
- 1 3/4 cups white beans drained
- 4 1/4 cups vegetable stock
- 1 pinch sugar
- 3 tablespoons cider vinegar
- Simmer the bacon and onion in 2 cups water for about 1 hour. Add the green and white beans, herbs, potatoes, carrots, apples and pears to the bacon and onions, pour in the stock and simmer for about 30 mins. Add the sugar and vinegar and season and serve garnished with oregano.
