Ricotta, Vanilla And Lemon Cookies

  1. Preheat the oven to 180C.
  2. Beat the ricotta cheese with the sugar, a pinch of salt, the lemon extract, the grated peel of 1 lemon, and the vanilla seeds.
  3. Add the egg.
  4. Incorporate the flour; the mixture should be smooth and uniform in consistency.
  5. Cut the dough into pieces and shape into long links, then braid the links or shape them into rings.
  6. Coat the cookies with granulated sugar and place them on a wax paper lined cookie sheet.
  7. Bake the cookies for approximately 20 minutes.
  8. Remove the cookies from the oven and cool on a wire rack.
