Sweet Potato Rosti With Smoked Salmon And Avocado

  1. Add the egg to a medium sized bowl and add the grated sweet potato, salt, paprika and red onion.
  2. Add 1/2 tsp coconut oil to a fry pan and heat on medium heat. Spoon in the rosti mixture and press down to form a pancake. Fry for a few minutes each side until golden brown and cooked through.
  3. Remove the rosti from the pan. Serve topped with smoked salmon, green leaves, zucchini/snow peas and avocado mixture. Top with poached egg if desired.
