Spicy Sausage And Bean Casserole
- 1 tablespoon oil
- 1 pound pork sausages
- 2 onions peeled, chopped
- 1 red chili seeded, chopped
- 4 tomatoes cut into wedges
- 15 ounces cannellini beans drained, rinsed
- 2 1/2 cups tomato puree
- 1 tablespoon chili powder mild
- 1 teaspoon ground cumin
- sour cream to serve
- cilantro leaves fresh, chopped, to garnish
- Preheat oven to 375u0b0F.
- Heat oil in a Dutch oven. Saute sausages for 6-7 mins, until browned. Add onions and chili. Cook for 5 mins, until softened. Add tomatoes, beans, tomato puree, chili powder and cumin. Bring to a boil and season. Transfer to oven and bake for 30 mins.
- Serve with spoonfuls of sour cream. Garnish with fresh cilantro.
