Chocolate Sandwich Cookies
- 1 cup butter room temperature
- 3/4 cup granulated sugar
- 1 tablespoon granulated sugar
- 1 teaspoon vanilla extract
- 7 ounces chocolate melted
- 1 egg
- 1 2/3 cups flour
- 1 cup cocoa powder
- 1 tablespoon baking powder
- 1 teaspoon salt
- 5 5/8 tablespoons butter
- 1 2/3 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon granulated sugar
- 1 tablespoon milk

- Preheat the oven to 150 degrees Celsius.
- In a bowl, mix together the butter, granulated sugar, vanilla extract, melted chocolate, and egg.
- Separately, sift together the flour, cocoa powder, baking powder, and a pinch of salt.
- Beat the two mixtures together until combined.
- Roll the dough into a tube shape and wrap in plastic wrap. Refrigerate 1 hour until firm.
- Cut the tube into 2-centimeter rounds and place the rounds on a baking tray, making sure to leave room between cookies (as they will spread out while baking).
- Bake for 20 minutes, then set aside to cool completely.
- For the filling, beat together the butter, powdered sugar, granulated sugar, vanilla extract, milk, and pinch of salt.
- Fill a piping bag and pipe the filling onto the top of one cookie. Top with a second cookie to make a sandwich.
