Chocolate Sandwich Cookies

  1. Preheat the oven to 150 degrees Celsius.
  2. In a bowl, mix together the butter, granulated sugar, vanilla extract, melted chocolate, and egg.
  3. Separately, sift together the flour, cocoa powder, baking powder, and a pinch of salt.
  4. Beat the two mixtures together until combined.
  5. Roll the dough into a tube shape and wrap in plastic wrap. Refrigerate 1 hour until firm.
  6. Cut the tube into 2-centimeter rounds and place the rounds on a baking tray, making sure to leave room between cookies (as they will spread out while baking).
  7. Bake for 20 minutes, then set aside to cool completely.
  8. For the filling, beat together the butter, powdered sugar, granulated sugar, vanilla extract, milk, and pinch of salt.
  9. Fill a piping bag and pipe the filling onto the top of one cookie. Top with a second cookie to make a sandwich.
