Chicken Soup

  1. In a large pot, add the water, chicken, giblets, leek, and the chicken stock cube.
  2. Simmer on medium heat until the chicken is cooked.
  3. Remove the chicken and let cool. Shred the chicken.
  4. Turn the heat on again and add the potatos and carrots.
  5. Season with salt and cook until the vegetables are done.
  6. Remove from heat.
  7. Add the shredded chicken and couscous and cover.
  8. The couscous will cook in the hot broth.
  9. Stir just so the couscous does not sink to the bottom. Serve warm, drizzled with lemon.
  10. Garnish with mint.
