Mixed Nuts Brownies
- 12 tablespoons cocoa powder
- 150 grams unsalted butter
- 1 1/2 cups sugar
- 2 tablespoons vanilla extract
- 4 eggs
- 1 cup flour
- 1/4 cup pistachios plus extra for garnish
- 1/4 cup almonds plus extra for garnish
- 1/4 cup walnuts plus extra for garnish
- 1/4 cup chocolate plus extra for garnish
- 4 eggs
- 1 cup sugar
- 110 grams dark chocolate finely chopped
- 250 grams unsalted butter room temperature, chopped
- Preheat the oven to 180 degrees Celsius.
- In a microwaveable bowl, add the cocoa and butter for 30 seconds, then stir and microwave for 30 more seconds. Stir and let it cool.
- Add sugar and vanilla and mix well. Add the eggs one by one, then add the flour, mixed nuts, and chocolate. Mix but do not over-beat.
- Pour into a baking pan lined with aluminum foil. Bake for 20 to 25 minutes. Take out of the oven and let the brownies cool.
- Beat the eggs and the sugar for 5 minutes. Place this mixture over a bain marie, stirring constantly for 2 to 3 minutes until it thickens.
- Add the chocolate and cook for 3 more minutes.
- Pour this mixture into another bowl and let it cool. Add the butter and beat using the electric mixer. The frosting should be creamy.
- Spread the frosting over the brownies and sprinkle with mixed nuts.
