Key Lime Pie
- 6 cups graham crackers
- 7 tablespoons butter
- 1 can condensed milk
- 8 egg yolks
- 4 limes
- 4 egg whites
- 2 cups sugar
- 1 cup water
- 1 pinch salt
- Preheat the oven to 180 Celsius.
- Crumble the graham crackers and mix with the melted butter. Press firmly into a pie plate. Bake for 15 minutes, until slightly golden. Remove from oven and cool.
- Mix the egg yolks with the condensed milk. Add the lime zest and juice. Pour into the pie plate and bake 25 minutes, until firm. Let cool and refrigerate, overnight if possible.
- Place the water and sugar in a saucepan and cook together until 120 C, approximately 10 minutes, without stirring.
- Beat the egg whites with a pinch of salt until stiff. Add the sugar mixture little by little to the egg whites and continue to beat until cool and compact.
- Spread the meringue over the pie and brown slightly with a kitchen torch.
