Bean And Corn Soup With Sausage Meatballs
- 6 3/4 tablespoons sweetcorn canned
- 4 tablespoons cherry tomatoes halved
- 1 onion small, peeled and finely chopped
- 1 clove garlic peeled and finely chopped
- 1 red chili pepper small, seeded and cut into fine rings
- 1 teaspoon oil
- 1 1/4 cups vegetable stock
- 4 tablespoons frozen green beans
- 1 3/4 ounces sausage coarse, skinned
- 1 tablespoon lemon juice
- Cook beans in boiling salted water for 7 mins. Drain.
- Meanwhile, heat oil in a frying pan. Saute onion, garlic and chili. Add stock and corn and simmer for 10 mins. Puree then pass through a fine mesh strainer. Add beans, tomatoes, lemon juice and season. In a separate pan, sear the meatballs until browned. Add to the soup and cook for 2-3 mins. Serve.
