Fruit Whip
- 1 envelope unflavored gelatin
- 1/4 c. lime juice
- 1 tsp. grated lime rind
- 3/4 c. fruit cocktail syrup
- 1/2 c. sugar
- almond extract
- 1 c. chilled evaporated milk
- 1 1/2 cans fruit cocktail, drained
- ladyfingers
- Soften the gelatin in the lime juice.
- Combine lime rind, syrup, sugar, salt and gelatin in a saucepan and heat, stirring until gelatin is dissolved.
- Blend in several drops of almond extract.
- Then chill until slightly thickened.
- Whip evaporated milk in a chilled bowl until light and fluffy and fold in gelatin mixture.
- Fold in fruit cocktail and chill until partially set. Line serving dish with ladyfingers and spoon fruit mixture into dish.
- Chill several hours and garnish with other fruits.
