Chicken With Red Wine Sauce
- 2 onions
- 1 celery branch
- 6 slices bacon
- extra-virgin olive oil
- 10 chicken drumsticks
- salt
- pepper
- flour
- chicken
- 1312 1/3 feet red wine full-bodied
- 1640 7/16 feet chicken broth
- dried mushrooms Some
- 3 sprigs thyme
- 3 1/8 cups mixed mushrooms
- 2 garlic cloves
- Cut onions into slices.
- Cut celery into thin slices and finely dice bacon.
- Heat a little oil in a large pan and saute the ingredients.
- Season drumsticks with salt and pepper and dredge in flour.
- Heat plenty of oil in a heavy skillet and fry the chicken drumsticks until golden.
- Add wine to pan with onion mixture and cook until liquid is slightly reduced.
- Add the chicken drumsticks, dehydrated mushrooms and chicken broth.
- Cover and let simmer for about 50 minutes to an hour.
- Add a few sprigs of thyme.
- Cover and set aside.
- Before serving it, saute mushrooms garlic and add to chicken.
- Serve with plenty of bread for dipping in sauce.
