Grilled Wings With Charred Pepper Salsa
- 1 shallot chopped
- 2 cloves garlic chopped
- 1 cup fresh lime juice
- 1/2 cup sesame oil
- 1/2 cup vegetable oil
- 2 teaspoons hot pepper sauce such as sriracha
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1/2 pound peppers
- cubanelle
- serrano
- cherry bomb
- 1/2 cup light olive oil divided
- 2 cloves garlic minced
- 1/4 cup red wine vinegar
- 1/2 cup sweet chili sauce
- sea salt
- pepper
- 3 pounds chicken wings
- 1 teaspoon sea salt
- 1/2 teaspoon fresh ground black pepper
- Combine shallot, garlic, lime juice, sesame oil, vegetable oil, hot pepper sauce, soy sauce and honey in jar with tight fitting lid. Shake to combine. Let sit 15 minutes.
- Season chicken with salt and pepper. Pour 1 cup Sesame Lime Marinade over wings in large resealable bag. Turn bag to coat chicken and chill at least 2 hours, up to 1 day.
- Heat 1/4 cup olive oil in large skillet over high heat. When oil is very hot, add peppers in batches (do not crowd pan) and let skin blister and char in spots, 4-5 minutes. Do not over cook. Transfer to cutting board and let cool slightly. Remove stems and chop peppers. Combine charred peppers with garlic, red wine vinegar, remaining olive oil and sweet chili sauce. Season with salt and pepper and set aside.
- Place the Smart Oven+ Grill Attachment in oven. Select GRILL Mode and preheat Grill to Medium heat setting.
- Remove chicken from marinade and grill 20-25 minutes, turning occasionally to get all sides charred. You may need to grill in batches - do not crowd Grill.
- Serve immediately with Charred Pepper Salsa.
