Spiced Beef Nachos
- 1 tablespoon olive oil
- 1 red onion finely chopped
- 1 red bell pepper deseeded, finely sliced
- 1 red chili long, finely sliced
- 2 cloves garlic minced
- 2 teaspoons dried oregano
- 2 teaspoons ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon smoked paprika
- 1 teaspoon ground coriander
- 1 pound ground beef
- 13 1/2 ounces diced tomatoes
- 13 1/2 ounces kidney beans drained, rinsed
- 7 ounces tortilla chips
- 3 1/2 ounces Mexican cheese grated
- 1 avocado
- 1 tablespoon lime juice
- 1 tomato finely chopped
- 1 spring onion finely chopped
- 1 tablespoon cilantro leaves fresh, finely chopped
- sour cream to serve
- lime wedges to serve
- Heat oven to 350u0b0F. Heat oil in a large frying pan over medium heat, saute onion, pepper, chili and garlic for 3-4 mins, until tender. Add oregano and spices and cook for 1 min, until fragrant. Increase heat to high, brown ground meat for 5-10 mins. Add diced tomatoes and 1/2 cup water. Simmer for 10 mins. Add kidney beans and simmer, stirring occasionally, for 10 mins, until thick.
- Arrange beef and 1/4 of the tortilla chips in a baking dish. Sprinkle with grated cheese then bake for 10-15 mins, until cheese melts.
- Meanwhile, to make guacamole, mash avocado and lime juice. Add tomato, spring onion and cilantro. Serve nachos with remaining tortilla chips, sour cream, guacamole and lime wedges.
