Falafel
- 3/4 cup chickpeas
- 1 garlic clove peeled
- 5 sprigs fresh parsley
- 2 sprigs fresh coriander
- 1 lime
- 1 teaspoon ground cumin
- 1 1/2 teaspoons sweet paprika
- 1 teaspoon rosemary ground
- 1 tablespoon flour
- 1 teaspoon yeast

- olive oil
- 5/8 cup plain yogurt
- 1/2 lime
- 2 tablespoons vinegar
- 2 tablespoons mayonnaise
- 1 tablespoon sesame seeds
- salt
- ground black pepper
- Soak the chickpeas overnight in plenty of water.
- The following day, chop the garlic, parsley, and coriander.
- Drain the chickpeas and place in the food processor. Add the garlic, parsley, coriander, lime juice, 1 teaspoon water, cumin, sweet paprika, rosemary, paprika, flour, yeast, and a pinch of salt and black pepper.
- Heat plenty of olive oil in a saucepan.
- Shape the chickpea dough into plum-sized spheres. Once the oil is hot, add the spheres and fry for 5 minutes or until golden brown all over.
- Place the falafel on paper towels to absorb the excess oil.
- Mix the yogurt, lime juice, vinegar, mayonnaise, parsley, and sesame seeds. Season with a pinch of salt and black pepper.
