Shrimp And Pork Dumpling Soup
- 4 ounces shrimp peeled, deveined, finely chopped
- 4 ounces ground pork
- 4 green onions finely sliced
- 2 teaspoons soy sauce
- 1/2 teaspoon fresh root ginger grated
- 24 squares wonton wrappers
- 4 cups chicken stock
- 1 tablespoon soy sauce
- 1 piece fresh root ginger peeled, cut into thin julienne
- 5 ounces fresh shiitake mushrooms thinly sliced
- Combine shrimp, ground pork, green onions, soy sauce and ginger in a bowl. Place 1 tsp mixture into center of each wrapper.
- Wet edges with a little water. Fold diagonally to form a triangle, pressing moistened edges together and using thumbs to press down on pastry around filling to secure and center it. Bring 2 points of long edge together, folding 1 point over other to overlap, and press to seal. As each dumpling is shaped, place on a tray lined with baking paper.
- To make broth, place stock, soy sauce, ginger and 2 cups water in a large saucepan and bring to a boil. Reduce heat to low. Add mushrooms and dumplings and simmer gently for 3-4 mins, until dumplings float.
