Sweet Almond Pasta
- 2/3 pound vermicelli
- 2 1/8 cups milk
- 7/8 cup cream
- 2 teaspoons cornstarch
- 6 egg yolks
- 1 lemon peel
- 1 cinnamon stick
- 3 orange blossoms
- 1 1/2 cups sugar
- 2 teaspoons honey
- 7 1/4 tablespoons ground almonds coarsely
- Bring a pot with water and some rock salt to a boil.
- Break the pasta in half, and add to the boiling water.
- Boil for 3 to 4 minutes, then drain well. Rinse in cold water, and set aside.
- In a saucepan, mix the milk, cream, cornstarch, egg yolks, lemon peel, cinnamon stick, orange flowers, sugar, honey, and crushed almonds.
- Mix well, and bring to a boil, stirring constantly.
- When hot, add the vermicelli, and continue cooking, stirring until sauce thickens slightly.
