- 2 baguette cut to patty size
- cilantro As needed, picked
- 2 cups water
- 3 tablespoons coconut vinegar
- 1/2 tablespoon salt
- 2 tablespoons sugar
- 1/2 pound red bell pepper julienned
- 1/2 pound carrots julienned
- 1/2 pound cucumber julienned
- 1 pound ground pork
- 1 shallots minced
- 2 cloves garlic minced
- 5 tablespoons sugar
- 1/4 cup fish sauce
- 2 tablespoons salt
- 1/4 cup black pepper
- 2 cups carrots minced
- 1 1/2 cups wood ear mushrooms minced
- 1 cup bean threads (Asian cellophane noodles) minced
- 2 tablespoons bonito flakes
- 3 spring onions minced
- For the Vietnamese Sausage Patties: Combine all patty ingredients, form patties and cook through on a griddle or grill
- For the Pickled Vegetables: Combine water, vinegar, salt, and sugar in a small saucepan and bring to a simmer over low heat, letting salt and sugar dissolve. Pour over vegetables and reserve
