Lavosh (Crackers)
- 1 c. flour
- 1 1/2 tsp. sugar
- 1/8 tsp. baking soda
- 1/8 tsp. salt
- 2 Tbsp. butter, softened
- 6 Tbsp. buttermilk
- 1 egg white, lightly beaten
- 1 Tbsp. sesame seed, toasted or 1 Tbsp. caraway seed
- 6 oz. Havarti cheese, shredded
- Preheat oven to 450u0b0 with lowest rack 6 inches from the bottom, the next rack 6 inches above it.
- Combine flour, sugar, soda and salt.
- Cut in butter with a pastry blender until crumbly.
- Add buttermilk, one tablespoon at a time, tossing dough with a fork to mix.
- Once dough holds together, knead lightly on a floured surface.
- Divide dough in half.
- On floured waxed paper, carefully roll out each half into a 10-inch circle.
- Invert onto a greased cookie sheet and remove paper.
- Brush with egg white and sprinkle with seeds.
- Bake 10 to 12 minutes, rotating cookie sheets between racks to assure even browning.
- Cool on wire racks.
- Just before serving, divide cheese between crackers and place in a warm oven until cheese melts.
- Cut into wedges to serve.
