Autumn Burger With Sweet Potato Chips
- 1 1/8 pounds beef steak mince
- 2 red onions 1 finely chopped, 1 sliced into rings
- 1 teaspoon dijon mustard
- 3 tablespoons breadcrumbs
- 3 tablespoons milk
- 4 1/4 cups olive oil
- 1 1/3 pounds sweet potatoes peeled and finely sliced into rounds
- 4 burger buns
- 8 streaky bacon rashers
- 6 tablespoons apple sauce
- 8 lettuce leaves radicchio, torn
- mayonnaise to serve, optional
- Mix ground beef, chopped onion, mustard, breadcrumbs and milk in a bowl. Season to taste then form into 4 burgers. Heat 1 tbsp oil in a frying pan, add burgers and sear for 8-10 mins, turning occasionally, until cooked through.
- Meanwhile, heat remaining oil in a deep-fat fryer or pot to 350u0b0F. Add potato slices, in batches. Remove with a slotted spoon and drain on paper towels. Season with salt and keep warm.
- To finish, fry bacon for 4-5 mins until crispy then drain on paper towels. Spread applesauce over burger buns then add lettuce, burgers, sliced onion and bacon. Serve with sweet potato chips and mayonnaise (if using).
