Chicken Fajitas
- 2 Tbsp. lemon juice
- 1/2 tsp. garlic salt
- 1/2 tsp. ground cumin
- 1/2 tsp. dried oregano, crushed
- 2 dashes hot pepper sauce (optional)
- 12 oz. boned skinless chicken breast or turkey
- 1 medium tomato
- lettuce
- 1/4 c. chopped onion
- 1/4 c. chopped green pepper
- 7 to 8-inch flour tortillas
- sour cream or low-fat yogurt
- cheese (optional)
- Combine lemon juice, garlic salt, cumin, oregano and hot pepper sauce.
- Slice poultry into thin bite size strips.
- Add to juice minutes.
- Toss lightly to coat and set aside.
- Chop tomato and shred lettuce.
- Set them aside in serving bowls.
- Spray large skillet with nonstick spray.
- Preheat skillet over high heat.
- Add undrained poultry mixture, onion and green pepper to skillet.
- Cook and stir for three minutes or until poultry is tender and no longer pink and liquid has evaporated.
- Put in serving bowl.
