Chicken, Corn And Avocado Tacos
- 1 tablespoon oil
- 1 red pepper deseeded, finely chopped
- 1 onion finely chopped
- 1 pound ground chicken
- 1 ounce taco seasoning mix packet
- 12 ounces sweet corn canned, rinsed
- 1 avocado pit removed, flesh finely chopped
- 8 taco shells
- 5 ounces shredded lettuce
- 4 1/4 ounces cheddar grated
- tomato salsa to serve
- sour cream to serve
- Preheat oven to 350u0b0F.
- Heat oil in a large frying pan on high. Saute pepper and onion for 3-4 mins, or until tender. Add chicken. Brown well for 4-5 mins, breaking up lumps with the back of a spoon.
- Add taco seasoning, stirring well. Mix in sweet corn and 3/4 cup water. Bring to a boil. Reduce heat and simmer for 2-3 mins, or until slightly thickened. Gently stir in avocado.
- Meanwhile, place taco shells on a baking sheet and warm in the oven according to package instructions.
- Fill tacos with chicken mixture. Top with lettuce, cheese, salsa and sour cream.
