Whole Wheat Vegetable Pizza
- 1/2 tablespoon yeast
- 1 pinch sugar
- 3/4 cup water lukewarm
- 3/4 cup whole wheat flour
- 3/4 cup white flour
- 1/2 teaspoon salt
- 1 tablespoon olive oil

- 450 grams vegetables your choice, green pepper, onion, zucchini, broccoli, mushrooms, etc.
- 2 cloves garlic minced
- 2/3 cup pasta sauce
- 2 tablespoons olives minced
- 1/2 cup mozzarella cheese shredded
- Preheat oven to 230 Celsius.
- Mix the yeast with the sugar, water, and salt. Cover with plastic wrap and set aside in a warm place for 10 minutes.
- Combine the whole wheat and white flours and add the yeast mixture. Add the olive oil and continue to mix until the dough is smooth and elastic.
- Place in a lightly oiled bowl, cover with plastic wrap, and set in a warm place until it doubles in volume, approximately 30-60 minutes.
- Tap the dough so that it deflates and divide into two sections. Form each into a circle approximately 20 centimeters in diameter and place onto a pizza pan or stone.
- Bake for 5 minutes and remove from oven.
- Saute the vegetables and garlic in the olive oil until tender.
- Spread the sauce evenly over the pizza crust, sprinkle with olives, layer the vegetables, and sprinkle with cheese.
- Return to oven and bake for 8 minutes at 220 C.
