Whole Wheat Vegetable Pizza

  1. Preheat oven to 230 Celsius.
  2. Mix the yeast with the sugar, water, and salt. Cover with plastic wrap and set aside in a warm place for 10 minutes.
  3. Combine the whole wheat and white flours and add the yeast mixture. Add the olive oil and continue to mix until the dough is smooth and elastic.
  4. Place in a lightly oiled bowl, cover with plastic wrap, and set in a warm place until it doubles in volume, approximately 30-60 minutes.
  5. Tap the dough so that it deflates and divide into two sections. Form each into a circle approximately 20 centimeters in diameter and place onto a pizza pan or stone.
  6. Bake for 5 minutes and remove from oven.
  7. Saute the vegetables and garlic in the olive oil until tender.
  8. Spread the sauce evenly over the pizza crust, sprinkle with olives, layer the vegetables, and sprinkle with cheese.
  9. Return to oven and bake for 8 minutes at 220 C.
