Whipped Strawberry Pie
- 1 (9-inch) graham cracker crust
- 3 eggs, separated
- 3/4 c. sugar, divided
- 1/4 tsp. salt
- 2 tsp. lemon juice
- 1 c. strawberries, crushed
- 2 Tbsp. strawberry juice, heated
- 4 Tbsp. strawberry flavored gelatin
- 1/3 c. heavy cream, whipped
- 1/4 tsp. cream of tartar
- In a saucepan, combine egg yolks, half the sugar, salt, lemon juice and strawberries.
- Cook over low heat, stirring constantly, until the mixture boils.
- Remove from heat and add the juice and gelatin.
- Chill until partially set.
- Beat with hand beater.
- Fold in whipped cream.
- Beat egg whites with remaining sugar and cream of tartar until stiff.
- Fold into strawberry mixture.
- Pour into pie crust.
- Chill.
- Serves 8.
