Kasspatzle
- 4 cups flour
- 3 eggs
- 3 egg yolks
- 1 cup milk
- salt to taste
- 1 teaspoon melted butter
- 1 onion
- 5/8 cup diced bacon cube-, heavily smoked ham
- 2/3 cup Appenzeller cheese
- 5/8 cup gruyere chesse
- 5/8 cup comte chesse
- In a large bowl, mix the flour, the whole eggs, the egg whites, and the milk to obtain an even dough. Add salt at the end.
- Allow the dough to rest for 10 minutes.
- Heat a large pot of water.
- Grate the dough with a cheese grater over the hot water.
- Let the dough cook in the water until the pieces float to the surface.
- Drain and rinse with cold water to stop the baking.
- In a frying pan, heat 30 grams of butter.
- Sautee the chopped onion in the butter for 5 minutes.
- Add the diced ham and mix.
- Add the pasta and cheese.
- Mix with a wooden spoon until the cheese melts.
