Spicy Yogurt Chicken
- 3/4 cup greek yogurt
- 2 tablespoons fresh cilantro chopped
- 2 cloves garlic minced
- 1 teaspoon ginger finely chopped
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 4 chicken breasts scored
- 1 tablespoon vegetable oil
- salad
- 1 cucumber small, halved, seeded, chopped
- 1/2 pound cherry tomatoes quartered
- 1 tablespoon fresh oregano leaves
- 1 tablespoon olive oil
- black olives to serve
- Combine yogurt, cilantro, garlic, ginger and spices. Coat chicken with mixture then chill, covered, for 4 hours, or overnight, to marinate.
- Heat oil in a large frying pan over medium heat. Cook chicken for 5-6 mins per side, until cooked through.
- Meanwhile, to make the salad, combine cucumber, tomatoes, oregano and olive oil. Season.
- Serve chicken with salad and black olives.
