Spicy Beef Burritos
- 1 1/2 pounds ground beef
- 1 onion small, chopped
- 2 cloves garlic chopped
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 dash hot sauce optional
- 1/4 cup light olive oil
- 2 tomatoes seeded, finely diced
- 2 tablespoons cilantro chopped, plus extra to serve
- 1 red pepper cut into strips
- 8 tortillas large burrito
- salad greens to serve
- sour cream to serve
- Combine beef, onion, garlic, spices and hot sauce, if using, in a large bowl and mix well. Heat 2 tsp oil in a large frying pan on medium. Cook beef mixture, stirring to break up any lumps, for 5 mins, until lightly browned. Add tomato and cilantro. Reduce heat to low, cover and simmer for 15 mins, until tender.
- Meanwhile, heat remaining oil in a pan on high. Cook red pepper for 5 mins, until tender. Heat tortillas according to packet directions.
- Top tortillas with salad greens, cilantro, spicy beef mixture, red pepper and sour cream. Wrap up to enclose filling and serve.
