Seafood Paella
- 7/8 pound langoustines or small lobster or whole crawfish
- 7 ounces jumbo shrimp
- 7 ounces medium shrimp
- 9/16 pound squid
- 6 mussels cooked
- vegetable oil
- 2/3 pound chicken chunked
- 2 garlic cloves diced
- 1 green bell pepper chopped
- 1 red bell pepper chopped
- 1 onion chopped
- 1 tomato peeled and grated
- 2 1/8 cups rice
- saffron
- water
- salt
- In a large, wide skillet, saute the langoustines, jumbo shrimp, medium shrimp, squid, and mussels in a little oil. Remove from heat and set aside.
- Now saute all the chicken. Remove from heat and set aside also.
- Now add the garlic, bell peppers, and onion to the same skillet.
- After 5 minutes, add the tomato.
- Add the rice, saffron, and water and stir well.
- When this mixture begins to boil, stir back in the langoustine, shrimp, squid, and chicken. Salt to taste.
- Let the rice cook through and let sit a bit before serving. Decorate with the mussels.
