Chicken Satay
- 2 tablespoons vegetable oil
- 1 tablespoon sesame oil
- 7/8 cup soy sauce
- 1/2 lemon juiced
- 1 9/16 pounds chicken tenders cut into bite size chunks
- 2 tablespoons vegetable oil
- 2 onion small, finely diced
- 1 garlic clove diced
- 1/2 cup peanut butter creamy version
- 1 cup water
- 1/2 lemon or lime, juiced
- 1 pinch cayenne pepper
- Soak the kebab sticks in water so they do not burn during cooking.
- In a bowl, mix together the vegetable oil, sesame oil, soy sauce, and lemon juice. Add the chicken and stir well. Cover with plastic wrap and marinate in the refrigerator as long as possible.
- Heat up the 2 tablespoons of vegetable oil in a skillet and add the onion. Saute until softened then add the garlic stirring everything together.
- Add in the peanut butter, water, and lemon or lime juice. Simmer on low heat a few minutes constantly stirring until the consistency of heavy cream. If too thick, add a bit more water.
- Preheat the oven to 200 degrees Celsius.
- Spear the marinated chicken onto the kebab sticks.
- Grill or cook under the oven's broiler for 15 minutes turning frequently.
- Serve with the satay sauce sprinkled with cayenne pepper.
