Trattoria La Palazzina’S Tiramisu
- 3 eggs
- 7/8 cup heavy cream
- 1 15/16 cups mascarpone cheese
- 3 tablespoons sugar
- 6 cups espresso
- 1 teaspoon rum
- ladyfingers
- cocoa powder
- Add the egg whites to a bowl and whip using a whisk or electric mixer until stiff peaks form.
- In another bowl, whip the heavy cream.
- In a separate bowl, add the egg yolks with the sugar and mix well. Add the mascarpone and mix well.
- Use a spatula to incorporate the egg yolk mixture into the beaten egg whites. Add the whipped cream by folding them together carefully to be sure they remain light and airy.
- Make 6 cups espresso. If you like you may add a teaspoon of rum.
- Dip the cookies into the warm coffee and place a layer of cookies in a baking dish. Add a layer of the cream, and alternate cookies and cream until the dessert is complete.
- Sprinkle the top with cocoa powder.
