Trattoria La Palazzina’S Tiramisu

  1. Add the egg whites to a bowl and whip using a whisk or electric mixer until stiff peaks form.
  2. In another bowl, whip the heavy cream.
  3. In a separate bowl, add the egg yolks with the sugar and mix well. Add the mascarpone and mix well.
  4. Use a spatula to incorporate the egg yolk mixture into the beaten egg whites. Add the whipped cream by folding them together carefully to be sure they remain light and airy.
  5. Make 6 cups espresso. If you like you may add a teaspoon of rum.
  6. Dip the cookies into the warm coffee and place a layer of cookies in a baking dish. Add a layer of the cream, and alternate cookies and cream until the dessert is complete.
  7. Sprinkle the top with cocoa powder.
