Goat Cheese And Lentil Salad
- 4 tablespoons lentils
- lettuce sliced, or spinach
- 8 cherry tomatoes
- 4 tablespoons beet ground
- 2 handfuls corn roasted
- 7/8 cup goat cheese
- salt
- 1 teaspoon mustard
- 4 teaspoons apple vinegar
- 8 teaspoons olive oil
- 1 teaspoon honey
- Place the lentils in a bowl with cold water and let it sit overnight.
- Boil the lentils in a small cooking pot at medium heat for 10 minutes.
- Strain them and soak with cold water.
- Mix the lettuce (as much as you want), cherry tomatoes, beet, and corn in a salad bowl.
- Heat the goat cheese in the microwave for 5 seconds. Add to the salad, then salt to taste.
- Mix the mustard, apple vinegar, olive oil, and honey in a small bowl.
- Pour the dressing over the salad and serve.
