At-Home, No-Butter Caramel Popcorn
- 5 cups popped popcorn
- 2 tablespoons vegetable oil
- 1 tablespoon granulated white sugar
- 1/2 cup brown sugar
- 1 teaspoon pure vanilla extract
- 1 tablespoon spun honey
- 1 teaspoon sea salt
- add vegetable oil to medium saucepan and warm on low heat
- add granulated sugar and stir with spatula until melted
- add brown sugar and vanilla extract and combine -- mixture will still be grainy
- add honey and stir continue stirring until sugar is completely melted -- a syrupy consistency will be achieved
- remove saucepan from heat
- spoon popcorn directly into the pan and use a spatula to roll it around until most of the popped kernels are covered in the caramel mixture
- spread corn onto a baking sheet covered with wax paper and sprinkle with sea salt
- allow to cool completely -- serve in a bowl
- for a quicker option, you may alternatively put the popcorn in a bowl and drizzle the hot caramel mixture over the top and mix it in with a spatula -- sprinkle with sea salt and allow to cool before serving
