Italian Flavored Chicken Meatballs

  1. In a bowl, mix the ground chicken, eggs, Parmesan cheese, and tomato tapenade with a fork. Add salt and pepper.
  2. Make small balls with a 2 centimeter diameter.
  3. Saute chicken balls in a hot pan with 2 tablespoons of olive oil until brown.
  4. Cover the pan, and cook on a low heat for 10 minutes.
  5. In a saucepan, heat tomato sauce and diced tomatoes.
  6. Add basil and zucchini, salt, and pepper. Cook for 10 minutes, zucchini should be crunchy.
  7. Pour the sauce over the meatballs, and stir.
  8. Just before serving, remove from heat, and add the mozzarella balls.
  9. Serve with polenta or pasta.
