Italian Flavored Chicken Meatballs
- 2 3/16 cups minced chicken or chicken fillets to chop
- 3 tablespoons grated Parmesan cheese
- 2 tablespoons tomato tapenade
- salt
- ground black pepper
- 2 tablespoons olive oil
- 1 jar basil flavoured tomato sauce
- 1 can diced tomatoes
- basil
- 1 zucchini small cubes
- 2 eggs
- 1 bag mozzarella balls
- In a bowl, mix the ground chicken, eggs, Parmesan cheese, and tomato tapenade with a fork. Add salt and pepper.
- Make small balls with a 2 centimeter diameter.
- Saute chicken balls in a hot pan with 2 tablespoons of olive oil until brown.
- Cover the pan, and cook on a low heat for 10 minutes.
- In a saucepan, heat tomato sauce and diced tomatoes.
- Add basil and zucchini, salt, and pepper. Cook for 10 minutes, zucchini should be crunchy.
- Pour the sauce over the meatballs, and stir.
- Just before serving, remove from heat, and add the mozzarella balls.
- Serve with polenta or pasta.
