Chocolate Chip Cakes
- 1 cup water
- 3 1/2 tablespoons butter
- salt
- sugar
- wine
- 2 tablespoons vin santo
- 2 cups flour
- 6 eggs
- 1 lemon
- 6 2/3 tablespoons chocolate chips
- 1 teaspoon vanilla
- vegetable oil
- powdered sugar
- Bring the water to a boil with the butter, a pinch of salt, the vin santo, and 25 grams of sugar.
- Add the flour and stir continuously and keep the dough on the heat until it no longer sticks to the saucepan while sizzling lightly.
- Place the dough in the mixer bowl and allow it to cool.
- Knead the dough with the mixer's hook attachment and add the eggs, one at a time, lemon zest, and chocolate chips (or raisins), and vanilla.
- Heat the oil and add the dough in small spoonfuls. The dough will puff up and the interior will be almost hollow.
- Drain the cakes on paper towel, coat them with powdered sugar, and serve hot.
