Great Minestrone Soup
- 1/2 c. olive oil
- 1/4 c. Promise margarine
- 1 large onion, diced
- 2 large carrots, diced
- 2 medium potatoes, diced
- 1/2 lb. green beans, cut in 1-inch pieces
- 1/2 small cabbage, shredded
- 1/2 bag spinach, shredded
- 2 medium zucchini, diced
- 1 (16 oz.) can white kidney beans, drained
- 1 (16 oz.) can red kidney beans, drained
- 1 (28 oz.) can whole tomatoes (low salt)
- 6 c. water
- 6 pkg. low sodium Herb-Ox instant broth (3 chicken, 3 beef)
- 1/2 c. Parmesan cheese (optional)
- Brown everything in oil; break up tomatoes.
- Simmer 40 to 60 minutes until vegetables are tender.
- Sprinkle with grated Parmesan cheese when serving (if desired).
- A large pot is needed for cooking.
- Great for freezing.
