Great Minestrone Soup

  1. Brown everything in oil; break up tomatoes.
  2. Simmer 40 to 60 minutes until vegetables are tender.
  3. Sprinkle with grated Parmesan cheese when serving (if desired).
  4. A large pot is needed for cooking.
  5. Great for freezing.
