Chicken With Parsley And Hot Sauce Salad
- 1/3 cup fresh parsley finely chopped
- 1 tablespoon hot sauce Valentina
- 1 tablespoon olive oil
- 2 cloves garlic finely chopped
- 2 chicken breast halves skinless and deboned
- salt
- ground black pepper
- 2 tablespoons low-fat mayonnaise
- 1 tablespoon capers chopped
- dried dill crushed
- 1 teaspoon dijon mustard
- salt
- ground black pepper
- 3 cups lettuce assorted, thinly sliced
- 1/2 green bell pepper thinly sliced
- 2 tomatoes small, chopped
- 1/4 cup onion thinly sliced and marinated in water and vinegar
- 1/2 cup cucumber seeded and chopped
- Mix the parsley, Valentina sauce, oil, and garlic. Season with salt and pepper to taste. Marinate the chicken in this mixture for 15 minutes in the refrigerator.
- Roast the chicken in a hot skillet until golden brown on both sides. Let it cool and cut into strips.
- Mix the mayonnaise, capers, a pinch of dill, and the mustard. Season with salt and pepper to taste.
- Mix the lettuce, bell pepper, tomato, onion, and cucumber. Dress the salad and toss carefully using tongs. Add the chicken strips and serve.
