Calhoca-Style Roast Hake

  1. Preheat oven to 200 degrees Celsius.
  2. Place hake slices on a baking tray.
  3. Add onion, garlic, bay leaf, Jamaica pepper, tomatoes, red pepper, and green pepper. Sprinkle with parsley.
  4. Season with salt, pepper, and cumin.
  5. Drizzle with wine and water, but do not cover the fish entirety (2/3 wine and 1/3 water).
  6. Distribute pieces of butter on the fish, and sprinkle with a little of olive oil.
  7. Bake for 20-25 minutes at 200 C, or until the cooking liquid bubbles, and the onion browns.
  8. Accompany with potatoes and a salad.
