Baked Goat Cheese Salad

  1. Pour the olive oil onto a plate.
  2. Mix the breadcrumbs with the paprika, tarragon, and ginger. Set aside.
  3. Dip each slice of cheese into the olive oil and then coat with the bread crumbs. Place into a baking dish. Broil until the cheese begins to melt and the bread crumbs begin to brown.
  4. Prepare the vinaigrette by whisking together the mustard, vinegar, oil, salt, and pepper.
  5. Place the lettuce onto serving plates and drizzle with vinaigrette. MIx to coat. Place the cheese on the bed of lettuce and sprinkle a little vinaigrette on top. Serve.
