Express 2 Minute Coffee Cup Cake
- 2 1/8 tablespoons butter cold
- 4 3/4 tablespoons granulated sugar
- 1 egg
- 4 tablespoons cream fresh
- 5/8 cup flour
- 1/3 teaspoon baking powder
- 2 1/8 tablespoons butter cold
- 2 3/8 tablespoons sugar
- 7 2/3 tablespoons flour
- Soften the butter in the microwave for 10 seconds, add sugar, and mix together with a fork.
- Add the fresh cream and mix.
- Add the egg, then flour and baking powder. Mix until you get a smooth dough.
- Pour in cups filling to 2/3 full, the cake will inflate while cooking.
- Prepare the streusel with your fingers, mixing butter, sugar, and flour to a coarse sand. Drop on each cake.
- Microwave for about 1 minute, then for 10 to 50 seconds so that the cake is perfectly cooked, and doesn't explode in your microwave.
- Flavor the cake with vanilla, and the streusel with cinnamon.
- Serve with a strawberry salad.
