Chocolate Mousse
- 7 ounces bittersweet chocolate chopped
- 7 ounces milk chocolate chopped
- 7 ounces white chocolate chopped
- 3/4 cup boiling water divided
- 3/4 cup heavy cream divided
- 1 1/2 teaspoons vanilla divided
- 1 teaspoon instant espresso powder
- 3 eggs
- Place chopped bittersweet chocolate in blender. Add 1/4 cup boiling water and process 30 seconds on speed 2 (chop).
- Add 1/4 cup heavy cream, vanilla, espresso powder, and 1 egg. Process 15 seconds on speed 3 (mix). Divide between 4 small bowls. Chill 1 hour.
- Place chopped milk chocolate in blender. Add 1/4 cup boiling water and process 30 seconds on speed 2 (chop).
- Add 1/4 cup heavy cream, vanilla and 1 egg. Process 15 seconds on speed 3 (mix). Pour onto bittersweet layer. Chill 1 hour.
- Place chopped white chocolate in blender. Add 1/4 cup boiling water and process 30 seconds on speed 2 (chop).
- Add 1/4 cup heavy cream, vanilla and 1 egg. Process 15 seconds on speed 3 (mix). Pour onto milk chocolate layer. Chill 1 hour before serving.
