Bakers Brothers’ Chocolate Cake

  1. Preheat the oven to 160 degrees Celsius.
  2. Lightly grease an 18- to 20-centimeter diameter high-sided cake pan.
  3. In a large bowl, whisk together the cake flour, cocoa powder, baking soda, and sugar.
  4. Mix in the Golden Syrup and milk.
  5. Separately, whisk together the eggs and the oil.
  6. Stream this into the first mixture constantly, beating until well combined.
  7. Fill the cake pan to no more than 2/3 its height and bake for 1 hour or until a toothpick inserted in the middle comes out clean.
  8. While the cake bakes, make the ganache frosting.
  9. Pour the chocolate chunks, cream, and Golden Syrup into a double boiler.
  10. Boil the water underneath making sure the water never touches the top pot.
  11. Stir until the ganache is smooth and shiny.
  12. Set aside to cool.
  13. Once done, let the cake cool inside the cake pan, then invert.
  14. Slice horizontally.
  15. Spread ganache on the top of the bottom half of the cake.
  16. Place the other half of the cake on top and frost the whole cake with the rest of the ganache.
