A Crock Of Butt Roast
- 2 1/2 pounds roast Bone In Pork Shoulder Butt, Look for a lean cut, this can also be replaced with a nice Pork Loin
- 4 hot Italian sausage links I personally like the hot, my wife prefers the sweet
- 15 ounces potatoes can Whole White, Drained, If you love potatoes use 2 cans
- 14 1/2 ounces sauerkraut cans Bavaria Style, Undrained
- 11 1/4 ounces guinness bottle, Extra Stout
- 4 teaspoons pepper
- 1/4 teaspoon salt
- 1 tablespoon vegetable oil
- Heat the vegetable oil in a fry pan on med-high heat until hot.
- Salt and Pepper pork as desired and sear on all sides in the fry pan
- Remove the pork from fry pan and place in the bottom of the crock pot.
- Place the Sausage links into the same pan and sear on all sides.
- Remove the Sausage links and place in the same crock pot.
- Drain potatoes and pour into crock pot with the sausage and roast.
- Add 3 cans of kraut to the crock pot.
- Pour in the bottle of Guinness, the liquid should just cover the kraut.
- Add Salt and Pepper as desired.
- Put lid on crock pot and put on high until the liquid begins to simmer
- lower heat to low and cook for 5-6 hours depending on the cut of meat and your altitude. The meat should fall apart easily with a fork, If not continue to cook checking in 15-20min increments,
