Green Pepper, Grilled Tomato, Chicken, And Cheddar Mini Pizzas
- olive oil
- 1 tomato
- salt
- ground black pepper
- 1 shallot
- 1 green bell pepper
- 1 clove garlic
- 1 tablespoon sugar
- pizza dough
- 2 chicken cutlets
- white cheddar cheese
- Preheat the oven to 180 degrees Celsius.
- Place the tomato slices on a parchment paper-lined baking sheet. drizzle oil on both sides of the tomato slices, along with a pinch of salt and black pepper.
- Broil for for 5 minutes on each side. Watch closely so that the slices do not burn.
- Add a tablespoon of oil to a skillet on medium heat. Add the shallot, bell pepper, and garlic and saute for 5 minutes.
- Add the vegetables to a food process with the sugar. Puree until smooth and set aside. Set aside.
- Roll out 40 gram dough balls to make thin mini pizzas
- Cover the dough with the bell pepper sauce. Place the tomato sliced on top.
- Top with chicken and cheese.
- Raise the oven temperature to 200 C and bake for 15 minutes until the crust is golden. Serve hot.
