Honey Oatmeal Bread

  1. In large mixer bowl, combine 1 cup oats, butter, boiling water, honey and salt.
  2. Cool to warm (105u0b0 to 115u0b0).
  3. Stir in yeast.
  4. Add 2 eggs and 2 1/2 cups flour.
  5. Beat at medium speed, scraping bowl often, until smooth (1 to 2 minutes).
  6. Stir in enough remaining flour to make dough easy to handle.
  7. Turn dough onto lightly floured surface; knead until smooth and elastic (about 10 minutes). (Add more flour as needed until dough no longer sticks.)
  8. Place in greased bowl; turn greased side up.
